Great Spring Salad

 

  • Watercress 
  • Arugula 
  • Lettuce
  • Strawberries
  • Goat Cheese 
  • Olive Oil
  • Balsamic Vinegar
  • Walnuts

Pull off leaves from watercress. Wash, rinse and spin dry with arugula and lettuce. Tear greens into good size pieces.

Toast walnuts in oven at low temperature (200 degrees or so) until you can smell them. Break into pieces and toss in small bowl with honey until they are well covered.

Wash and slice strawberries

Assemble salad by placing half the greens in salad bowl. Top with  1/2 strawberry slices,  1/2 honey covered walnuts and small bits of 1/2 goat cheese. Place the rest of the greens on top  and

Finish salad by placing strawberries, walnuts and goat cheese.

Whisk together equal amounts of balsamic vinegar and olive oil with salt and pepper. Serve dressing on side (experiment with dressing according to your taste).
