In 1981, Christopher Leach had the good fortune to find himself on a train crossing the French countryside to Paris. It was on that first European adventure that Christopher discovered charcuterie, a wondrous world of flavor and texture that would change his life in the years to come. A seed was planted in the heart and mind of a young cellist that would grow into a passion.

That passion now has a name: The Beautiful Pig. Christopher Leach, charcutier and salumist for The Beautiful Pig has developed more than twenty original recipes for pork and beef products inspired by the traditions of Spain, France, Italy, Poland, Hungary and the USA.The Beautiful Pig products use exclusively Carlton Farms pork from Carlton, Oregon in the heart of Willamette Valley wine country. This pork is sustainably raised and is hormone and  antibiotic free and is so rich it almost looks like beef. The beef comes from Painted Hills Beef in Fossil, Oregon. The animals are naturally raised and are also hormone and antibiotic free. The wines in our salamis are of the finest possible quality and are indiginous to the areas that inspire the recipes.
