Roasted Cauliflower Salad

1 head cauliflower
1 small red onion
2 TBL Olive Oil
2 TSP Cumin 2 TSP Paprika
Pinch of salt
3 cups arugula
2 TBL Maple Syrup
3 TBL Tahini
Juice from 1 lemon
1/4 Cup roasted sunflower seeds

Dice onion into quarter size pieces, cut cauliflower into steaks. Drizzle veggies with olive oil, and rub on cumin and paprika. Roast on a sheet pan at 425 degrees for about 20 minutes. Chill veggies for 1 hour. Mix tahini, maple syrup, salt & lemon juice with a fork. Toss dressing with arugula & veggies Top with sunflower seeds.
